祁門紅茶, 又叫「祁紅」。 因產於安徽省祁門縣而得名, 是世界三大高香紅茶之一, 香氣特別, 似花、 似果、 似蜜, 以「香高、味醇、形美、色艷」四絕馳名於世! 不但享有「祁紅特絕群芳最, 清譽高香不二門」美譽; 在國際上亦被譽為「群芳最」和「王子茶」以及「紅茶皇后」的美名! “Keemun” is the county of Anhui Province. 不說不知, 英國是世界上飲紅茶最多的國家之一, 而飲下午茶更是一種高雅的社交活動。 在英國, 人們在進下午茶點時, 茶要點點潤飲; 點心要細細品嘗; 衣著要典雅入時, 人們將飲茶視為一種高貴身份的象徵, 而當時的祁門紅茶是下午茶中的極品。
The United Kingdom is one of the countries drinking the most black tea, and afternoon tea is an elegant social activities. In the UK, when people have afternoon tea, they would drink bit by bit; and taste snack slowly, as well as wearing elegant clothes. British will drink tea as a symbol of noble status, while the Keemun black tea at that time is one of the best teas.
祁紅採摘至完成過程大致分為採摘、初制和精製三個主要過程:
The process of picking Keemun tea can be divided into three processes: picking, Initial producing and refining:

1. 採摘: 其採摘的標準相對較高, 製作高檔茶, 採摘的原材料為一芽一、 二葉為主。春、夏、秋是開採的三個季節。採摘的茶葉須立即製作, 以保證鮮葉的新鮮程度。
Picking: The standards for picking are relatively high. For such high-grade tea, the raw materials for picking are mainly one bud, one or two leaves. Spring, summer and autumn are the three seasons for picking. In order to ensure the freshness, the leaves must be made immediately after picked.
2. 初制: 即初步製作過程, 包括萎凋、揉捻、發酵、烘乾等步驟。 經過上述步驟製作成的初茶成品, 茶葉呈紅色, 香氣香濃; 經過發酵這個步驟, 使得茶葉的顏色變成紅色, 然後決定祁門紅茶品質, 此為最重要的一步。
Initial Producing: It’s an initial process, including withering, rubbing, fermentation, drying and other steps. After the above steps, primary product has done. After fermentation step, the tea leaves turn red and aroma produces as well. Then the final step and it’s the most important step is to decide the quality of Keemun tea.
3. 精製: 將初制好的祁門紅茶茶品, 再進行挑選, 剔除雜質以及品質不好的, 在經過一系列不斷的精製工序, 祁門紅茶成品茶就製作而成了。
Refining: After the above second step, pick, remove impurities and poor quality tea leaves. After a series of continuous refining processes, the high quality Keemun black tea has made.

茶具選擇要隨心; 不一定要人云亦云, 個人認為是喝出最好的一份心情, 所以只要是符合自己心情的茶具便可, 當然不同的茶具喝出的「心情」又會是不一樣的。 如: 玻璃茶可觀茶色, 感覺給人一份喜悅的心情; 紫砂壺沖泡則可盡顯其傳統本味, 若再聽一曲古箏樂, 便又可以品出一份茶的清靜優雅!但在沖泡功夫茶時, 則要以瓷具為主, 一般要選用紫砂茶具、白瓷茶具和白底紅花瓷茶具。
Selecting Tea Set is from your heart; no need to follow others for the tea set selection. Personally, I would think is best to drink a good mood, so as long as your mood in line with the tea set. Of course, different tea set would drink a different "mood". For example, glass tea set could see the color of the tea, you may felt kind of joyful mood; Yixing clay teapot can show its traditional flavor, plus listening to a Guzheng music, you might drink a quiet and comfortable mood. However, brewing Kung Fu tea, which needs porcelain or chinaware as based; generally using Yixing clay tea sets, white porcelain tea sets and red safflower porcelain tea sets.
喝茶容易, 想要喝到最正宗的祁紅卻是不容易, 但要泡好一杯絕佳的祁紅更不容易, 而且要開湯才能判斷其質量的好壞。
Drinking tea is easy. It is not easy to drink the most traditional Keemun black tea, but it is not easy to make the best Qimen tea. After brewing up, you would then see whether the quality of the tea is good or bad.
沖泡的水溫要適宜, 紅茶一旦用溫度稍高的水來沖泡就會澀, 90至95度最佳。Water temperature should be appropriate for brewing. Once the black tea is brewed with slightly higher temperature water, it will be astringent, and 90 to 95 degrees is best.
沖泡時間需三分耐心; 沖泡時, 一定要靜等三分鐘, 這第三分鐘不僅可以讓祁門紅茶的茶香更加芬芳濃郁, 也是心境的一個修煉過程。 喝茶很忌諱心情浮躁, 浮躁的人喝茶, 喝出來也只能是更多煩惱; 只有心境平和時去靜靜地品味一杯好茶, 才能真正的品出茶的悠香! Brewing time needs patience; when brewing, be sure to wait three minutes, the third minute not only allows more aroma lead out from Keemun tea, but also a state of mind practice. It’s better to avoid the fickle mood when drinking tea because such mood can only be created more trouble. Only peace of mind can quietly taste a cup of good tea!
最後,品茶需一口一點潤飲, 切不可心急。 品茶當然要一口一口慢慢地喝點點飲潤, 方能唇齒留香, 持久。 所謂一品有三口, 這第一口品的是茶香濃郁,口感甘醇; 第二口品的是心境悠然, 唇齒留香; 第三口品的是人生和諧, 茶香雖已去, 但回味無窮!Finally, tea needs to drink bit by bit; must not be impatient. Of course, a cup of tea needs to drink slowly, then you can find how good the taste is and the smell of aroma keeps lasting. There are three tastes: the first taste you would find how rich the tea is in the mouth; the second taste is to drink in line with leisurely mood; the third taste is to drink the harmony life. 祁門紅茶沖泡最簡單的方法: 將水燒沸, 取茶3克最宜, 沖入150ml左右的沸水, 沖泡後隔45秒左右倒入小杯, 先聞香, 再品味, 滿口生香, 回味甘美。
The Easiest Way of Brewing Keemun Black Tea: put 3g of the tea into the 150ml of at 90 – 95 degree of temperature water. After brewing in 3 minutes, then pour into the small cup, the first step is to smell, then taste, and you would find full of scent, Sweet aftertaste.
